Irish Cream Shortbread Cookies
1 cup unsalted butter, softened 1 tsp. pure vanilla extract 2 eggs 4 cups all-purpose flour 1 Tbsp. baking powder ¾ cup white sugar ¾ cup brown sugar 1 cup Irish Cream ¼ tsp. salt Preheat the oven to 350°F. Line baking sheets with parchment paper. In mixing bowl, cream butter and sugars using an electric mixer. Add vanilla and eggs and mix well. Mix in Irish Cream. Stir in sifted flour, salt and baking powder. Scoop dough on a prepared baking sheet leaving enough room for the cookies to expand. Bake for approximately 18 minutes or until slightly browned. Cool cookies for 5 minutes on baking sheet, then carefully transfer cookies to a separate cooling rack to cool completely.
