Chicken Curry Pita
2 Tbsps. olive oil
2 Tbsps. olive oil
1 cup sliced onion
2 Tbsps. lemon juice ½ pound cooked chicken, cut into chunks
1-3 tsps. curry powder, to taste
1 medium apple, cored and diced
3 large pita bread rounds Shredded or sliced cheese of choice; I used shredded Mexican blend ½ cup sour cream or mayonnaise Heat oil in skillet over medium-high heat. Stir in onion and lemon juice. Cook until onion is tender. Mix in turkey, season with curry powder and continue cooking until heated through. Remove from heat. Stir in apple. Place sour cream on one side of pita. Stuff pitas with mixture and top with cheese.
