Cheese Bread
8oz cream cheese, softened
8oz cream cheese, softened
3 cups shredded mozzarella cheese
4 large eggs
4 Tbsps. aluminum free baking powder
2 cups almond flour
2 Tbsps. unsalted butter Preheat oven to 350°F. In small pot over low heat, melt cream cheese and mozzarella together. It should resemble a thick gooey paste. (Alternatively, place cream cheese in large microwave safe bowl and cover with mozzarella. Microwave 1 minute. Stir and continue microwaving at 30 second intervals until melted and smooth.) Allow to cool just enough to work with your hands. In large bowl, place almond flour, baking powder and eggs. Add melted cheeses. Mix with hands until smooth. Let stand 20 minutes. Form 2” balls or use cookie scoop and arrange on baking sheet. Melt butter and brush over top of each round. Bake 20-30 minutes or until golden and cooked through. Serve hot.
