Orange Soda Loaf

1 cup shortening ¼ cup unsalted butter, room temperature 2¾ cups granulated sugar 5 eggs, room temperature 3 cups all-purpose flour, sifted 1 cup Orange Crush orange soda 1 tsp. orange flavoring 1 tsp. pure vanilla extract Orange Cream Cheese Frosting ¼ cup unsalted butter, room temperature 3oz cream cheese, room temperature 1 cup powdered sugar 1 tsp. orange flavoring ½ tsp. pure vanilla extract Preheat oven to 325°F. Line 2 loaf pans with parchment paper or grease bottom of 10-cup capacity tube pan and coat with flour. In large mixing bowl, beat together shortening, butter and sugar at medium speed until light and fluffy, about 5 minutes. Beat in eggs until well-combined. Add in soda alternately with sifted flour. Beat until smooth and lump-free. Stir in orange flavoring and vanilla extract. Pour batter into prepared pans. Bake for 1 hour and 10 minutes, or until top is golden, and toothpick inserted into center comes out clean. If using loaf pans, allow to cool 15 minutes in pan. If using tube pan, flip the pan over onto wire rack. Let cake cool inside pan 15 minutes. Remove loaf from pan and place on wire rack to cool. In large mixing bowl, beat together butter and cream cheese at medium speed until light and fluffy, about 3 minutes. Add powdered sugar, orange flavoring, and vanilla. Beat until frosting is smooth and spreadable. Spread frosting over warm loaf.
