Club Inspired Pinwheels
½lb bacon about 6 slices, cooked and crumbled

8oz cream cheese, softened to room temp ½ cup Miracle Whip ¼ cup or 1 pkg. ranch seasoning
10 large tortillas, I used tomato basil for a more festive feel. Spinach would have worked well too.
1 cup Mexican blend shredded cheese
1lb each sliced turkey and chicken
3 tomatoes, diced as small as you can
1 head Romaine lettuce, shredded or cut into small pieces Cook bacon. Chop bacon into fine bacon bits. Using electric mixer, beat cream cheese. Add in Miracle Whip and ranch seasoning. Mix to combine. Add chopped bacon and shredded cheese and mix using a rubber spatula. Lay out tortillas to assemble. Spread cream cheese mixture evenly onto tortillas, dividing evenly. Take two slices each of turkey and chicken for each tortilla and place on tortilla covering tortillas. Add tomato and lettuce in the middle of each tortilla. Roll from the bottom up, tightly. Place in airtight container or wrap with plastic wrap and store in the refrigerator seam side down, until you are ready to slice, but at least 2 hours. Slice each tortilla into
1” slices.
Note: The tomatoes will make these soggy so they are best made the day you are going to eat them. You can eliminate them from inside and use a toothpick to secure a grape tomato on top if you’d prefer or if you need to prep them in advance.
