1 quart water ¼ cup salt 4lbs watermelon rind, diced into 1-2” squares 4 cups sugar 2 cups vinegar 1 tsp. whole cloves 5 cinnamon sticks In large pot, combine water and salt. Bring to boil and add watermelon rind. Cook 8 minutes. Drain and return to pot. Add sugar, vinegar, cloves and cinnamon sticks on top of watermelon rind. Bring to a boil. Turn off heat and cover. Let sit overnight 10-12 hours, at least. Bring mixture to boil again. Remove from heat and pack rinds in hot sterilized jars. Cover rinds with syrup leaving about ½” at the top of jar. Seal jar and store in a cool, dry location.
