1-2 large egg, depending on your preference
1 Tbsp. unsalted butter or grease from meat Salt and pepper, to taste
1 bagel of choice – I used a double cheese bagel or you could use a bagel thin if you wanted something smaller.
1 slice cheese or 2oz if you prefer shredded Meat of choice – bacon, sausage and even sliced deli meat are all good options 1 avocado, smashed or 2 Tbsps. guacamole Cook chosen meat as directed on packaging. If using bacon or sausage, save
1 tablespoon of grease for cooking eggs. If using deli meat, just lightly brown the meat and use butter for cooking eggs. Melt butter or grease in medium skillet and cook egg as desired. I prefer mine over medium. The lid to a canning jar will help you easily keep egg circular to fit on the bagel better. Toast bagel in toaster or on still hot skillet as desired. Once cooked, assemble sandwich. I used cheese on the bottom slice of bagel then deli meat, egg and guacamole topped with other half of the bagel. It was so good too! I have had several bagel sandwiched over the last couple weeks.
