I am going to share a couple of tips to help you make cakes. There are several things that can leave you with a mediocre finished product, inferior ingredients is one. I know it’s easy to use cheap products because they are more available or because the imitation is $2 cheaper than the pure extract, but there is a difference. Whenever possible, use high quality, fresh ingredients.
One of the most common problems in baking is overheating butter. When the recipe says to use softened butter, it should yield slightly to gentle pressure. If it is too soft, it will not cream properly with the sugar and that is essential to light, fluffy cakes. If you forgot to leave your butter out to soften, resist the urge to microwave. To get it to soften quickly, cut it into slices no bigger than 1 tablespoon servings and let it sit for about 30 minutes or until it is ready. The smaller the slice the quicker it will be ready.
Another thing. All cake is best kept stored in the fridge unless you are eating it all in one day. It will stay fresher. Also make sure to cover the cake or store in airtight container. This weekend, check your ingredients and make your grocery list. Then, meet me in the kitchen for so much cake!
