Simple Chicken Sandwich

Chicken breasts, halved – how many depends on how many sandwiches are needed 1 ½ cups all-purpose flour 1 tsp. chili powder ½ tsp. salt ½ tsp. pepper 1 cup buttermilk 2 Tbsps. sriracha 2 large eggs whisked Sliced cheese Brioche buns Lettuce, we used Romaine but use your favorite 1 large tomato, sliced ¼ cup Big Mac sauce or mayonnaise Whisk flour, chili powder, salt and pepper in one bowl. In separate bowl, whisk together buttermilk, sriracha and eggs. Dip one piece of chicken in flour mix and shake off any excess. Dip it in spicy buttermilk mix, then once again in dry mix. Repeat process until all chicken is seasoned. Add an inch of oil to a deep pan. Once hot, cook the chicken for 5-7 minutes, flipping halfway through. Cook in batches if needed. Don’t crowd pan. Once golden brown, remove from oil and place them on a paper towel to soak up excess oil. Lightly toast buns in oven or large skillet if desired. Once cooked, assemble sandwiches. I stacked cheese directly onto chicken and topped with lettuce and onion and a spicy mayo.
