Mulberry Crumb Bars
1 cup sugar
1 cup sugar
1 tsp. baking powder
3 cups flour ¼ tsp salt
1 tsp. orange extract
1 cup cold unsalted butter, cut in pieces 1 egg
5 cups mulberries (stems trimmed and washed)
2 Tbsps. lemon juice ¾ cup sugar
4 tsps. cornstarch Preheat the oven to 375°F. Grease a
9×13 pan with butter. Stir 1 cup sugar, baking powder, flour, salt, and zest in a bowl. Cut in butter and egg using pastry blender or fork. It will be crumbly. Press just a little more than half of mixture in bottom of pan. Bake it for 10 minutes. Gently stir mulberries with 3/4 cup sugar, juice, and cornstarch. Spread berry mixture over warm crust, then crumble remaining dough over top. Bake for about 30 minutes, or until top crust begins to brown. This will last longer if stored in fridge.
