BLT Chicken Salad
½ cup mayonnaise
½ cup mayonnaise
4 Tbsps. barbecue sauce ½ tsp. ground white pepper Salad greens, as needed to feed your crew
1 large tomato, diced
1 avocado, peeled, pitted and sliced
1 medium onion, diced
2 cups diced, cooked chicken-I used leftover chicken from above recipe
2 bacon strips per salad bowl, cooked and crumbled as desired 2 hardboiled eggs, sliced or diced as you prefer In small bowl, mix mayo, barbecue sauce and pepper until well combined. Set aside. In individual bowls, add salad greens. Sprinkle with tomatoes, onions, chicken pieces and bacon. Garnish with avocado slices and eggs. Drizzle with prepared sauce. Serve immediately.
