Turkey Melts
1 medium onion, sliced 1 large tomato, sliced 4 Tbsps. butter, divided 4 Tbsps. barbecue sauce-I actually used leftover dressing from the salad above!

2 slices sourdough bread per sandwich 2-4 slices pepper jack cheese, or other cheese as desired, per sandwich depending on size of bread slices 3 slices turkey bacon per sandwich 2 slices cooked turkey per sandwich In large skillet, sauté onions in 1 tablespoon butter until tender. Remove and set aside. Spread butter on one side of each piece of bread. On opposite side of one slice of bread, spread barbecue sauce. Place 1-2 slices of cheese on top of barbecue sauce. The bread I found was large slices and I needed 2 slices of cheese to cover bread. Layer turkey slices, bacon, sliced tomato and sautéed onions. Cover with 1-2 more slices of cheese and top with remaining slice of bread. Place sandwiches in hot skillet over medium-low medium heat. Toast until bread is golden brown, about 3-5 minutes. Flip sandwiches and toast other side until golden brown and cheese is melted. Slice in half and serve immediately.
