Chicken Caesar Salad Sandwiches

Chicken Caesar Salad Sandwiches 3 cups shredded rotisserie chicken (from 1 chicken) 2 oil-packed anchovy fillets, finely chopped 1 garlic clove, minced 1 Tbsp. fresh lemon juice 1 Tbsp. red wine vinegar 1 tsp. Dijon mustard ½ tsp. Worcestershire sauce ¼ tsp. salt ¼ tsp. ground pepper ⅓ cup extra-virgin olive oil ½ cup Parmesan cheese, grated, more or less to taste 4 sub rolls 4 romaine lettuce leaves Place chicken in medium bowl. Process anchovy fillets, garlic, lemon juice, red wine vinegar, mustard, Worcestershire sauce, salt and pepper in blender until smooth. Gradually add olive oil and process until smooth. Stir in Parmesan cheese. Taste and adjust flavor as desired. Pour dressing over chicken and toss to coat. Heat a large skillet over medium-high. Toast bread, cut side down, in hot skillet, until golden brown, about 2 minutes. Divide chicken mixture and lettuce leaves evenly among bottoms of toasted bread. Cover with bread tops and serve immediately. So good!
