Loaded Sweet Potato Bites
1 large sweet potato 1½ Tbsps. avocado oil 1 tsp. garlic powder ½ tsp. chili powder 1 tsp. paprika 1 tsp. ground pepper Mexican blend shredded cheese 3 green onions Sour cream Preheat oven to 450°F. In large bowl, add oil garlic powder, chili powder, paprika and pepper. Whisk to combine. Peel and cut sweet potatoes into ¼-inch slices. Place slices in bowl with oil and spices. Stir to thoroughly coat both sides of all slices well. Place on baking sheets lined with parchment paper, taking care so rounds do not overlap. I used one potato and needed 2 baking sheets. Bake 10 minutes. Remove from oven and flip rounds. Bake another 7-10 minutes or until soft. While potatoes bake, thinly slice green onions. Remove potatoes from oven and immediately top with cheese. Wait a few minutes for cheese to melt. To serve, place rounds on platter. Add a dollop of sour cream on each round, and garnish with sliced green onions.
