Easy Pumpkin Bread
1 cup canola oil
2 cups granulated sugar
3 large eggs
2 tsps. pure vanilla extract
2 cups packed pumpkin puree
3 cups all-purpose flour
1 tsp. salt
1 tsp. baking soda
2 tsps. baking powder
2 tsps. cinnamon
2 tsps. pumpkin pie spice Preheat oven to 325°F. In large bowl, mix together oil, sugar, eggs, vanilla and pumpkin. Set aside. In separate medium bowl, whisk together flour, salt, baking soda, baking powder, cinnamon and pumpkin pie spice. Add dry ingredients to wet ingredients and mix just until combined. Do not overmix. Line two 9×5” loaf pans with parchment paper. Divide mixture between two pans. Bake for 50-60 minutes or until toothpick inserted in center of loaf comes out clean. If bread looks like it is getting too brown after 45 minutes, cover loosely with aluminum foil for remaining baking time. Allow bread to cool in pan 10 minutes before removing to wire rack to cool completely. Sprinkle top with powdered sugar before serving, if desired.
