One Pan Sausage Pasta Skillet

2 13oz pkgs. smoked turkey sausage 1 medium onion, diced
2 garlic cloves, minced
3 cups unsalted chicken broth
1 13.6oz can diced tomatoes and green chilies, drained
1 cup heavy cream
1 tsp. ground pepper, more or less to taste
12oz uncooked bowtie pasta
2 cups Velveeta Queso Blanco cheese, cut into 1” cubes
1 cup sour cream Melt butter in large skillet over medium heat. Sauté onion 3-5 minutes or until it just begins to soften. Slice sausage into 1/4” rounds. Add to skillet and cook until just beginning to brown. Add garlic and cook until fragrant, about 2 minutes. Add chicken broth, heavy cream, diced tomatoes and chilies, and pepper. Stir to combine. Add pasta and stir, making sure pasta is submerged in liquid. Cover and simmer 15–
20 minutes or until pasta is as soft as desired. Add cheese and cover. Cook another 5 minutes or until cheese is melted. Stir well to combine. Add sour cream and mix well. Taste and adjust flavor as desire. Serve hot with additional cheese and sour cream if desired.
