Homemade Pop-Tarts

½ cup butter, melted 10 phyllo sheets per pan of tarts, divided-I used 30 sheets in 1 pouch in a box containing two pouches.
½ cup jam of choice, I used strawberry Preheat oven to 400°F. Line baking sheets with parchment paper. Follow directions on box carefully for handling phyllo sheets. They dry out quickly and will not work as well. Lay one phyllo sheet on prepared baking sheet. Brush with melted butter. Repeat for a total of five sheets on bottom. Make sure jam is easily spreadable. If needed, stir it to break it up or microwave just briefly to loosen. Spread jam on top of fifth buttered sheet leaving one inch border around edges. Top with phyllo sheet and brush with melted butter. Repeat for total of another five sheets. Cut pastry into 8 rectangles. A pizza-cutter works best. DO NOT move pastries. Bake for 12 to 15 minutes, or until golden brown. Remove from oven and let cool. Repeat with remaining sheets as desired. Serve warm.
Note: If you want a glaze, mix 1 cup powdered sugar and 1 teaspoon vanilla extract with 2-3 tablespoons of water. You want a nice drizzle consistency, but not something that’s just going to run off. Add water slowly to get the right consistency.
