Cheesy Breakfast Casserole
1lb breakfast sausage 1 yellow onion, diced 7 eggs ½ cup heavy cream 20oz bag frozen diced hash browns 16oz shredded cheese of choice, I did a mix of Mexican blend and Velveeta Salt & pepper, to taste Preheat oven to 350°F. Spray 9 x 13” baking dish with non-stick spray. Set aside. In large skillet over medium heat, cook sausage and onion until sausage is cooked through. Add 1 cup cheese and potatoes. Mix well and place in prepared baking dish, spreading mix evenly in pan. In medium bowl, whisk eggs and heavy cream together. Season to taste and whisk again. Pour over sausage mixture in pan. Bake for 35 minutes. Remove from oven and top with reserved cheese. Return to oven for 8 minutes or until cheese is melted. Allow casserole to rest 10 minutes. Serve and enjoy!
