BLT Tomato Cups

6-10 slices turkey bacon Roma tomatoes, about 2 per person Butter lettuce, 1 leaf per tomato 1 small onion, sliced and quartered into strips 2 Tbsps. dressing or sandwich sauce, more or less to taste Preheat oven to 400°F. Line baking sheet with parchment paper. Place bacon on prepared baking sheet leaving space between each piece. Bake 12 minutes. Flip bacon and return to oven. Bake 10 minutes more or until as crisp as you desire. It will crisp up a little more after out of oven. Allow to cool and crumble bacon. With serrated knife, cut each tomato in half crosswise. Using spoon, scoop out seeds and center from each tomato half, leaving enough tomato for firm shell. If necessary, cut small slice from bottom so tomato half stands upright. Cut lettuce leaf in half lengthwise. Tuck half into each tomato half around edge. Place bacon and onion strips as desired into tomato until full. Drizzle with dressing of choice. Enjoy!
