Slow Cooker Banana Oatmeal
1 cup steel cut oats 2-3 bananas, ripe or overripe 1 cup heavy whipping cream 3 cups milk ½ cup brown sugar 1 tsp. pure vanilla extract Line a slow cooker with Crock Pot liner. Place steel cut oats in slow cooker. Add milk and cream and stir to combine. Add brown sugar and vanilla. Mash bananas in a separate bowl until smooth and add to oat mixture. Stir well. Cook on low for 4-5 hours, or on high for 2-3, depending on the texture you prefer (longer for softer oats). Stir occasionally to keep moisture well distributed throughout and to prevent burning on edges. When serving, it may be thick depending on how long it cooked. Thin with heavy cream or milk if needed. Serve hot topped with fresh bananas if desired.
