Open Face Waffle
1 thick, toasted waffle per sandwich 2 eggs Salt and pepper to taste Sliced cheese Bacon, cooked and cut in half Other toppings as desired In small bowl whisk eggs, salt and pepper or other seasonings as desired. In small skillet, cook eggs as desired. I did scrambled this time, but I really like over medium as well. As a scramble though, you can add other veggies if desired. Onion is a good choice or spinach. Place waffle on plate. Top with condiment if desired and then cheese. Add bacon and top with eggs. Serve immediately.
