Brown Sugar Cinnamon Banana Bread
½ cup unsalted butter, softened 1 cup packed brown sugar 2 large eggs 6 large overripe bananas 2 tsps. pure vanilla extract 1 tsp. ground cinnamon 2 cups flour 1 tsp. baking powder 1 tsp. baking soda Pinch salt Topping: 2 Tbsps. brown sugar 1 tsp ground cinnamon Preheat oven to 350°F. Line 9x5 loaf pan with parchment paper. In bowl of stand mixer, cream butter and sugar until pale and fluffy, about 4 minutes. Add eggs, one at a time, beating after each addition. Add bananas (no need to mash first as long as they are truly overripe) and vanilla and mix well. Add cinnamon, flour, baking powder and soda and salt. Mix until combined. Transfer batter to prepared loaf pan. Mix brown sugar and cinnamon together. Sprinkle over batter in pan. Place pan in oven and bake 55 minutes or until skewer inserted in middle comes out clean. Allow to cool 10 minutes in pan. Remove from pan before slicing for serving while still warm.
